Terroir & vineyards
It is the wild fennel that grows around our vines that gave the Domaine du Fenouillet its name. The Faugères Blanc represents less than 2% of the appellation. Hautes Combes celebrates an exceptional wine-growing area, with our Marsanne and Roussanne grapes producing an elegant, mineral wine, fit for the finest tables.
Vinification and aging
Machine harvesting by night to preserve the aromatic freshness of the grapes. Destemming. Inert gas pressing. Cold static clarification of must so that only the finest lees remains. Fermentation at around 15°C in stainless-steel vats, except for 20% of the grapes, which are vinified in new 500-litre French oak barrels.

Met & Wine Agreement
Drink at 10-12°C, immediately or within 3 years, as an apéritif, or with a blanquette de veau, pan-fried scallops or hard cheese.
