Terroir & vineyards
Grown in our Devois des Agneaux d’Aumelas vineyard, on a limestone rock plateau previously used for sheep farming, the Grand Devois is a highly expressive wine resulting from a double selection (on the vine and in the wine cellar). A combination of the Mediterranean climate, altitude (200 m) and soil (limestone rock) limits the natural yield to produce an intense, concentrated wine.
Vinification and aging
Manual harvest. Sorting. Destemming. Cold prefermentation maceration. Fermentation in tapered wooden vats and stainless-steel vats (25-28°C), with daily pump-overs (1-4 per day) and one or two rack-and-returns, followed by long maceration for optimum extraction. Malolactic fermentation in barrels.
Tasting notes
Very intense, almost black colour, with ruby hues. An expressive nose with roasted, forest-fruit, pepper and garrigue aromas. The palate is well-structured, with blended tannins and a long, spicy finish
Met & Wine Agreement
Serve at 16-17°C with a leg of lamb or grilled lamb with herbs. Drink immediately or keep for 10-15 years.
