Terroir & vineyards
The Mas Neuf is a vineyard completely surrounded by waters (“Ilôt Muscat”) between the Mediterranean Sea, the ponds and the swamps. Mediterranean heat associated with the maritime sweetness gets wealth and aromatic freshness. This country of deep lakeside limestone allows an aromatic complex expression of all the nuances of the muscatel wine small grains.
Vinification and aging
Premature harvest to obtain a balance completes cool aromas, good acidity. Night-mechanical grape harvests to take advantage of low temperatures and avoid the oxidation of the must. Selection of drops and first press. Stalling on muds from 3 to 7 days. Low-temperature fermentation (16 in 18°C) in stainless tank..
Very pale color in the light green reflections offers an explosive nose with all the aromatic pallet of the Muscatel wine small grains: passion fruit, citrus fruits, floral and vegetable notes (honeysuckle, box tree). In the palate, these aromas find themselves, supported by a beautiful freshness.
