Terroir & vineyards
Mas Neuf is surrounded by the Mediterranean Sea and lakes. This shell limestone soil gives the grapes such a complexity in the aromas, from the white fruit (peaches, pears) to the exotic ones and flowers. Our vineyard is planted on red clay soils, in the “La gardiole” hilly range. The Climate is warm and dry,tempered by the immediate proximity of the Sea.
Vinification and aging
Late harvest when the grapes reach 14 to 15 potential degrees. We capture most of the juice and then send the grapes to the pressing machine. Selection of the juice, cold settling, racking before alcoholic fermentation. We stop the fermentation (by cold and filtration) when there is 60 g residual sugar.
A pale yellow color and a complex nose with aromas typical from Muscat (exotic fruit, citrus fruit) and Sauvignon blanc (white flower, boxwood).The palate is a wave of mixed sensations : sweetness and crispness blend together so unique, so inédit !
Met & Wine Agreement
Serve at 10°C. This wine pairs amazingly well with many courses, such as foie gras, blue cheese, desserts, but try it also on its own !
