An assemblage composed of Roussanne (40%), Marsanne (40%), Vermentino (10%) and Grenache blanc (10%).
Vinification and aging
The grapes are harvested at night by a grape picking machine with embedded sorting to preserve the aromatic freshness of the grapes. They are then directly pressed and we operate a cold static settling before the alcoholic fermentation carried out in frustoconical tanks in wood and barrels of 500 liters for the most beautiful Roussanne and Marsanne, and in thermo-regulated stainless steel vats for the rest of the assembly. .
The aging takes place during 4 months, ¼ of the wine in barrels of 500 liters, the rest in stainless steel tanks on fine lees.
