Terroir & vineyards
Plateau of limestone rock (éclats calcaires) 320 m above sea level, split by a natural gap 100 m deep and 150 m wide. Selection of the stoniest area for a spicy, well-structured style. Warm, dry Mediterranean climate, tempered by altitude and the continental influence of the Larzac.
Vinification and aging
Manual harvesting with sorting on the vine. Destemming. Fermentation in temperature-controlled coated concrete vats with daily pump-over. Long maceration period for Syrah grapes (15-20 days). Malolactic fermentation.
Tasting Notes
An intense red color that offers a nose with bright aromas of jammy fruit and spicy nuances. The palate is marked by an intense structure and a nice sweetness.
Met & Vin Agreement
Serve at 16-17°C with a prime rib of grilled beef, game in sauce or mature cheese. Drink immediately or keep for 8-10 years.
