Terroir & vignes
At the Causse d’Arboras estate, everything is extreme : the altitude of 320 m high, the location at the foothill of the imposing Mont St Baudile (848 m), the geological shift around the estate, the high planting density of 7000 plants/ha, the continental influence of the Larzac plateau, the terroir of calcareous splits. This wine is an invitation to discover one of the most unique and extreme estates on the beautiful appellation of Terrasses du Larzac.
Vinification and aging
Hand harvesting with grape sorting in the vineyard. Destemming. Crushing. Fermentation in cement vats with daily pumping overs. Long maceration of Syrah. Malolactic fermentation.
An intense deep red color that offers an expressive nose of ripe fruits with spicy notes. The palate is marked by a nice structure and volume.
Met & Wine Agreement
Serve at with a grilled T-bone, game with a sauce, or old cheese. You can enjoy it now or within 5 years minimum.
