Terroir & vineyards
Rigorous selection of the oldest terraced vineyards on the estate, on shady slopes facing south. The structure and composition of these soils lead to a natural limitation of yields, thus offering wines of rare elegance. The warm and dry Mediterranean climate is tempered by the altitude.
A selection of the oldest Syrah (80%) of the property completed by Grenache Noir (20%).
Vinification and aging
The grapes are manually harvested slightly over-matured then sorted and destemmed before being placed in a frustoconical wooden vat to give place to alcoholic fermentation, controlled between 25 and 28 ° C. Pigeages are made daily as well as load shedding at the beginning of fermentation for better extraction of color and tannins. The grapes then macerate under pomace for 20 to 25 days. The malolactic fermentation is carried out in barrels.
The aging in new barrels (50%) and a wine (50%) lasts 12 months on this vintage.
An intense purple color with a very expressive nose where aromas of black fruits, liquorice and spices mingle with toasted aromas. The palate is powerful and structured with silky tannins and a long lingering aromatic persistence.
Met & Wine Agreement
Enjoy at 16-17 ° C with a tajine of veal with prunes, a braised rib of beef with aromatic herbs or a duck breast with porcini mushrooms.
