Terroir & vineyards

A selection of the highest schistose slopes of the appellation (300 m above sea level), the vines are deeply rooted in the Visean shale dating back 350 million years. The structure and composition of these soils lead to a natural limitation of yields, thus offering wines of rare elegance. The warm and dry Mediterranean climate is tempered by the altitude. A blend composed mainly of Syrah (60%), Grenache (25%) and Carignan (15%), mainly composed of Syrah (60%), Grenache (25%) and Carignan (15%).

Vinification and aging

The grapes are harvested by night machine, to preserve the freshness of the aromas, and by hand for some parcels that are too steep or in goblets. Once the harvest is de-stemmed, the fermentation is carried out in stainless steel tanks at a controlled temperature of 25 ° C. A maceration under the marc for 10 to 15 days allows a better diffusion of the aromas and the color. The malolactic fermentation is done in stainless steel tanks. One third of the vintage is aged 10 months in French oak barrels. The distribution of the breeding is done proportionally in new barrels, a wine and two wines. The remaining two-thirds are aged in stainless steel vats.

Tasting notes

An intense garnet color that offers a very expressive nose where aromas of fresh red and black fruit mingle with spicy and flinty aromas. Beautiful balance in the mouth with silky tannins and a remarkable freshness that extends to a spicy finish with finesse.
