Terroir & vineyards

Schist plots among the highest in the appellation (300 m above sea level), on a combe. Selection of the highest-quality plots in the area. Warm, dry Mediterranean climate, tempered by altitude. The structure and composition of the soils place a natural limit on yields, producing wines with a rare concentration and elegance. This wine bears the name of a geographical feature of our vineyards, the combe, which turns red as the sun sets

Vinification and aging

Machine-harvesting by night, with manual harvesting for some slopes too steep for the machines and for Gobelet-trained vines. Fermentation in stainless-steel vats. Maceration of pomace for 10-15 days. Malolactic fermentation in vats.

Tasting notes

An intense garnet red color that offers a very expressive nose mixing fresh black and red fruit aromas (raspberry, blackcurrant), spicy notes and minerality (flinty notes). Beautiful balance in the palate with smooth and complex with silky tannins, remarkable freshness and a fine, spicy finish.

Met & Wine Agreement

Goes well with grilled meat, game in sauce, or mature cheese. To be served at 16-17°C, either immediately or in the next 5 years.
