Terroir & vineyards

The estate takes its name from the steep cliff of quartzite that dominates its vineyard, in the town of Causses-et-Veyran. The vineyards are located on slopes of Ordovician shale, mainly exposed south / south-east.
A wine made from a blend of Syrah (50%), Grenache (35%) and Carignan (15%).

Vinification and aging

The grapes are harvested by hand and placed in thermo-regulated stainless steel vats at 25 ° C to ferment the grapes. We then operate a long maceration of Syrah for 20 days on average. Malolactic fermentation is also done in stainless steel tanks.
The aging is done in stainless steel tanks for 12 months.

Tasting notes

A wine with an intense black color and a nose of black fruits and pepper with a slight hint of smoke. In cap, we find these black fruit aromas supported by a structure that is both rich and supple.

Met & Wine Agreement

To enjoy at 16-17 ° C with skewers of lamb or game (deer with cranberries, quail with grapes).
